We are seeking an experienced and talented Head Chef to join our team. The Head Chef will oversee all aspects of food services at Triwood Community Association. The Head Chef will be responsible for delivering an extremely high level of service that meets or exceeds guest expectations through food service delivery, and will ensure the highest operational standards are met including food safety, cleanliness of food service areas, fiscal performance and budgeting, menu development, service provider management, and programmatic opportunities.
Job Summary:
This is a full time role (40 hours per week), Tuesdays to Saturdays (mostly evenings), with requirements for flexibility depending on the food service needs of the Association week to week.
Key Responsibilities:
· Planning and Preparing
o Develop and excellent understanding of the needs of Triwood guests and develop/execute plans accordingly in conjunction with sales and events staff.
o Contribute, in conjunction with sales and events staff on menu development and costing estimates for banquet, special event, and JTs Clubhouse menus, including suggesting creative and cost-effective options.
o Establish and manage purchasing agreements/vendor relationships to maximize quality and cost effectiveness. Place supply orders as required and within budget.
o Monitor and report inventory levels as required.
o Have an accurate and detailed understanding of allergies and dietary requirements, ensuring a plan for substitution.
o Plan and oversee any support staff requirements within the kitchen. Oversee quality, speed, presentation, taste, and consistency of food prepared by support staff if present.
· Food Service Delivery
o Provide excellent service to guests including effectively and immediately addressing any concerns or complaints.
o Prepare soups, sauces, stocks from scratch.
o Cook meats, fish, and vegetables with supreme accuracy to maximize, taste, texture, and presentation.
o Deliver high quality food, in proper quantities, within specific timelines for up to 250 guests at a seating.
o Work with catering team to set up serving areas including buffet requirements and layout.
o Ensure presentation of food served is consistent with marketing material and is appealing.
· Food Service Operations
o Oversee management of food costs, with a focus on limiting wastage.
o Ensure all Alberta Health Service standards for food safety are consistently met on an ongoing basis.
o Ensure all food service areas are extremely clean, organized, safe, and in good repair.
o Work with Facilities Manager to complete necessary compliance requirements, maintenance, and equipment repairs.
o Ensure all Food Service procedures are followed, including opening and closing checklists, par levels, cleaning, documentation such as temperature check records, and quality control.
o Maintain a professional appearance and attitude at all times, including in stressful situations. Actively and calmly communicate with front of house staff as required.
o Work with Marketing and catering staff to effectively create and deliver promotional and sales materials as required, including tastings.
o Contribute to annual operating budget establishment, and actively participate in strategic or short term organizational or program planning sessions as required.
· Other duties as assigned by the Executive Director.
Key Requirements:
· Significant experience in high volume dining/catering.
· Minimum of interprovincial Red Seal certification, or equivalent cooking diploma or certification.
· High standard of customer service and the desire to do the best work possible.
· Strong attention to detail, ability to meet deadlines, and strong knowledge of food preparation and service standards in a high-paced dynamic workplace.
· Resilient and outcome focused in stressful situations, with a commitment to delivering well presented, quality food.
